Healthy and Comforting Soups To Keep You Warm This Winter
January in Orange County….. to rest of the U.S. it might seem like no big deal. We aren’t exactly associated with freezing temperatures, snow, and cold rains, however it has been EXCEPTIONALLY cold, lately and we all know how it goes this time of year: warm for a few days then cold again for a few more, and on and on, until it finally warms and stays that way for Summer. We still have quite a few chilly nights ahead of us and on those crisp, cold evenings, after a weekend day of watching football or a long weekday at work, it’s always wonderful to have something warm, comforting, and filling for dinner!
There is certainly no shortage of ideas out there, via incredible sites like, ‘Pinterest’, so do remember to keep them in mind, as you search for additional ideas! We found some yummy-looking ones in our search efforts and while it was hard to choose only a few, we selected 2 soups to highlight, partly because they’re popular, classic soups, and also because they just look so darn good! CREAMY AND COMFORTING
*It’s winter… it’s time for hibernation… You need to eat warm and filling meals to help with that process! Ok, so we aren’t meant to hibernate… BUT there is some scientific evidence to back us up with the need to eat more these colder months!
-Seasonal Affective Disorder (SAD).
It’s normal to want to cope with long, cold nights by filling up on food — numerous studies have shown that the brain actually produces feeling of happiness when you consume high-calorie, high-fat foods. Also, it gets darker, earlier so the tendency to overeat during the winter might come down to basic biology. Ira Ockene, MD, a cardiologist at the University of Massachusetts Medical School told NPR that winter eating could just be our primitive impulses urging us to stockpile for the cold months ahead.
-Traditions and holidays.
According to some scientists, winter weight gain is just a product of our environment, not biology. Between the holidays, Super Bowl Sunday, and Valentine’s Day, winter is packed with opportunities to overload on traditional, fatty foods. This coupled with a decrease in physical activity during cold winter months, and it’s only natural that most people gain a pound or two during winter and lose it come spring.
THE SOUP OF CHOICE: Chicken and Dumpling Soup
While we know it’s not good to eat rich, creamy, thick meals everyday, we also know that everything in moderation is key. This chicken and dumplings recipe is absolutely one of the ways your should splurge from time to time! It's amazing for many reasons:

*Toss everything into your slow cooker for a dinner that has a total of 10 minutes of prep and will leave you with just one pot to clean out at the end of the night.

*Even the pickiest eater will revel in these creamy and comforting flavors and textures. It’s chicken and biscuits… who doesn’t like that?! You can probably even get away with adding the veggies of your choice into the dish for some extra color, texture, and healthy stuff for the kiddos.

We suggest adding some diced sweet potato and chickpeas for an extra-hearty, stew-like meal that will keep you fuller, longer.
Make this amazing chili in a HUGE batch to serve for dinner, take for work lunches all week long, then freeze the rest! Freeze it in one or two large batches to use for large family meals, in later months OR freeze in smaller batches and simply re-heat for a smaller meal for 1-2 people in a flash!
