Best Spring Salad

INGREDIENTS
1 green apple, peeled and sliced thinly
1 spinach leaf, diced and mixed with a small amount of olive oil, lemon juice and salt
1 cup low-fat Greek yogurt
2 thinly sliced beets
1 tsp. dried oregano
1 garlic clove, minced
1 green onion, minced
2 sprigs fresh rosemary, minced
1 handful fresh parsley, minced
1 tbsp. olive oil
1 tbsp. lemon juice
DIRECTIONS:
1. Mix the raw ingredients in a large bowl with a fork or spoon. Let the mixture sit for 15 minutes.
2. Mix the yogurt and dressing in a separate bowl. Whisk together until the dressing is fully incorporated into the yogurt.
3. Toss the ingredients together in a large serving bowl. Add the dressing mixture to the salad. Stir it up with a fork. Spoon the salad onto 4 dishes and serve. Top with some freshly squeezed lemon juice. YUM!
